Autumn and its cloudy days are already in the city, and the closer we get to December the colder days are more common. This is the time when the tianguis and markets change the vegetables from bright greens and yellows to faint reds and golds. So, in October and November you can enjoy pumpkins, pomegranates, figs, tejocotes, and of course sweet potatoes. We made this tutorial to prepare a sweet potato latte and take advantage of its best season.

The sweetpotato is a tuber thousands of years old, which is believed to have originated somewhere between the Yucatan Peninsula in Mexico and the Orinoco River in Venezuela. There are more than 400 varieties of sweetpotato, with Michoacán being the largest producer in Mexico.

At this time of the year it is very common to see sweet pumpkin and sweet potato candy and all year round we can also hear the sweet potato cart and its particular sound; in Japan, they also have their version, as a small truck travels the streets announcing cooked sweet potatoes. While in South Korea, the goguma latte (고구마 라떼), a drink based on sweet potato and milk, has become very popular.

The goguma latte can be drunk hot or cold, it is very easy to prepare and taking advantage of the fact that at this time of the year you can find different varieties of sweet potato, we tell you how to make this drink in a cold version.

Ingredients:
-150 grams of cooked sweet potato (preferably baked or steamed). You can use the variety of sweet potato you like, we chose purple.
-300 milliliters of vegetable or animal milk.
-1 teaspoon of sweetener (sugar, maple syrup, honey, stevia or monk fruit)
-Cinnamon
-Ginger

Step 1:

In a blender add the cooked sweet potato in squares, and the milk to be used. Blend until you obtain a homogeneous mixture and add more milk in case the result is too thick.

Step 2:

Add the cinnamon and sweetener and blend again at a slow speed.

We prepare it in its cold version: we serve it in a glass with ice, but if you want to make it hot; pour the final mixture in a small saucepan over medium heat and wait for it to boil for about 5 minutes. You must stir the mixture constantly so that it does not stick.
