Jowong: the perfect encounter between Korea and Mexico at La Condesa

In the Condesa, a quiet corner of Pachuca hides a corner that redefines what it means to merge cultures through gastronomy: Jowonga restaurant that blends traditional Korean cuisine with the ingredients and soul of Mexico. Under the direction of chefs Greg Wong and Allen Noveck, this place not only serves food, but experiences designed to be shared at the center of the table, in a style that honors both culinary traditions.

My visit began with a selection of entrees that anticipated what would be an explosion of creativity and flavor. I ordered the kimchi, a fermented classic with a twist that screams authenticity, and the crushed cucumbers, crisp and fresh, with a punch of seasoning that makes them unforgettable. I couldn't resist the esquite, an unexpected twist that combines stracciatella, cotija cheese and a hint of Sichuan pepper to reinvent a Mexican staple.

The highlight was the Green Tteok-bokki, a reinterpretation that takes these rice cakes to the next level, dipping them in pesto and pairing them with asparagus, kale, fava beans and crispy panko. Each bite combined freshness and textures in a way that only someone deeply creative could imagine. In addition, the Gimbap Rice - with seaweed rice, spinach, roasted mushrooms and egg - reminded us that there is sophistication in simplicity.

To accompany this odyssey of flavors, I opted for the Kimchi Gibson, a savory martini where kimchi juice replaces the olive, offering a fermented and vibrant touch that felt like the ideal match for the dishes.

Jowong also shines for its signature cocktails and innovative desserts, courtesy of pastry chef Marifer Millán, although this time I was left wanting to close the experience with her Ho-tteok or her perilla mousse.
