Agüita Fría: picnic in the city

From Xalapa, Veracruz, Agüita Fría arrives to CDMX's Colonia Juárez with a fresh and authentic country proposal that invites us to escape the chaos without leaving the city.

Walking down Londres Street, one block from Reforma 222, and stumbling upon this 19th century house of red bricks and original ironwork is like opening a portal to a period fairy tale. As you walk up the main staircase, the magic begins: you are greeted by chef Alejandro López or Rodrigo Cervantes with the warmth of when you arrive home.

The spaces are spacious with cozy details: wooden furniture, fresh plants, Japanese-style trout paintings and a country atmosphere complemented by traditional music ranging from southeastern cumbias to jarana. If you're looking for fresh air, the back patio terrace with a few tables is a good option.

Agüita Fría opened its doors in Mexico City three weeks ago, but has been in Xalapa for six years. Located near a trout fishing area, trout and rabbit have become the stars of their menu. The success in Veracruz prompted them to bring their proposal to the CDMX, where the reception has been incredible. Their country menu, with dishes that one normally finds in places like La Marquesa or Amecameca, are now in the heart of Juárez.

The menu: With 11 starters, six main courses and a cocktail menu that promises, Agüita Fría won us over quickly. Each dish is a return to the countryside. The stars are obviously the trout, rabbit, and even the plantain tacos with mole, designed for vegetarians. 

It is best to order several appetizers in the center to share and then the main courses, so you can try a little bit of everything in one visit.

We asked Chef Alejandro for his recommendation for the Agüita Fría experience, and this was the menu:

Entrance fees to the center:

Esquite of the house with trout and bacon, served with sourdough bread.

Fried trout with habanero mayonnaise that transports you straight to a meadow.

Roasted cauliflower in almond mole. The star of the appetizers for its contrast between the salty cauliflower and the sweetness of the mole (my favorite).

Main courses:

Grilled trout, grilled and grilled, accompanied by dry chili and habanero dips, a light but satisfying dish.

Taco of rabbit carnitas with blue tortilla, zero fat.

Desserts:

Corn bread, a generous slice, crunchy on the outside and soft on the inside, like something out of a fairy tale, and roasted plantains served with cream, a country classic that awakens childhood memories.

Beverages:

Lemon water of the day with avocado and grapefruit soda.

If you are looking to get away from pretentious restaurants with long menus, Agüita Fría is the right place. Its cuisine reflects its country roots, with dishes that are healthy, light and full of that love for the countryside that is so lacking in the city.
